Anyone who has a Greggs high-street bakery in their area has no doubt heard of the Sausage, Bean and Cheese Melt. Unfortunately they do not make a vegan version yet. I am sure Greggs will make a vegan version of this popular pastry just as they have the stake bake and sausage roll. But for now it is easy enough to make your own at home with just 4 ingredients. All you need is some puff pastry, vegan sausages of your choice, baked beans and a vegan cheese of your choice. Most if not all the supermarket puff pastry will be vegan but always double check. Same goes for the baked beans.
This recipe is very filling and delicious. The way I have made them, each one is at least double the size of a standard Greggs pasty. Remember you can use any brand of vegan sausage you desire and use your favourite vegan cheese.

- Puff Pastry

To make this delicious vegan sausage, bean and cheese melt first pre-cook the sausages. Then grease an oven tray and place it in the over at 200 degrees Celsius. While the oven is pre-heating roll out the puff pastry on a flat surface. Cut the pastry in half, scissors are good for this job.
In a large bowl mix the beans, sausages and cheese (grated) and stir well. Then add the mixture to one half of each of the two halves of pastry. Once done, fold the pastry over to make a basic pasty shape. Use a fork to press down the edges.
Take the oven tray out the oven which should be pre-heated by now. Place the two pasties on the oven tray and cook for 20 minutes at 200 degrees Celsius. After 20 minutes you should have to delicious looking golden brown puff pastry pasties ready to serve and enjoy. Watch the easy-to-follow video below.
