Chicken And Mushroom Stuffed Potatoes


A hearty and satisfying vegan main dish. Potatoes stuffed with chicken mushrooms and cheese. This delicious vegan comfort food recipe takes a while to cook but it is well worth it in the end. Using a soy-based chicken substitute and button mushrooms as the main ingredients of the filling. We also add fresh coriander, red chilli and a delicious vegan cheese that melts in the oven and binds the ingredients together. We fill partially hollowed out baked potatoes and then return to the oven.

  • 2 large potatoes
  • 1 clove of garlic 
  • 2 tbsp of oil
  • 1 sprig of fresh rosemary
  • salt

  • fresh coriander
  • 2 red chillies
  • Violife vegan cheese


Take two large potatoes and part boil them for 20 mins, then rinse in cold water to stop them cooking further.  Add 1 tbsp of oil to a baking tray one finely chopped clove of garlic and a sprig of fresh rosemary. Add the 2 large part boiled potatoes and rub the oil, garlic and rosemary into the potatoes. Season with a generous amount of sea salt or rock salt. Then place in the oven on 200 degrees celsius for 45 minutes non-fan assisted.

vegan linda mccartney pulled chickenMeanwhile to make the filling chop up some button mushrooms, fresh coriander and red chillies and add them to a bowl, along with some Linda McCartney pulled chicken. Finally, grate some Violife vegan cheese into the bowl and add 1 tbsp of oil. Stir the mixture up. Place the mixture to one side for later.  

After 45 minutes take the potatoes out of the oven and leave to cool (leaving the oven on). Once cool enough to handle take a knife and cut the top off both potatoes. Then using a spoon hollow out the potatoes, not completely but enough to fit a generous portion of the filling inside. Now fill the potatoes with the pre-prepared filling. Place back in the baking tray and return to the oven at the same temperature for a further 20 minutes.

Finally, serve and enjoy!
