Red Lentil Spaghetti Bolognese


Even for those who don’t like lentils they will appreciate this delicious red lentil spaghetti Bolognese with carrots peas and green beans. Regular carnists who have tried this dish have not mentioned missing the mincemeat. Red lentil spaghetti Bolognese is healthy filling and delicious. There are many options when it comes to this Bolognese. This particular recipe does not include onions, mushrooms, tofu and many others. This recipe can easily be altered to suit your pallet.

  • 2 tbsp of oil
  • 2 clove of garlic 
  • 1 tsp of turmeric powder
  • 1 tbsp of coriander powder
  • Salt & pepper
  • 1 cup of red lentils
  • 3 cups of water
  • 2 carrots
  • 1 cup of frozen garden peas
  • 1 cup of frozen green beans
  • 1 third of a cup of vegan gravy granules
  • 2 portions of spaghetti



Take a large cooking pan and add 2 tbsp of vegetable oil. Turn hob to a medium heat and add 2 finely chopped cloves of garlic. Whilst the garlic is browning add 1 tsp of turmeric powder and 1 tsp of ground coriander powder. Add salt and pepper. Now add some tomato puree and stir the contents of the pan into a paste. 

Once you have achieved a thick paste full of flavour add 1 cup of pre washed red lentils along with 2 cups of water. Add 2 chopped carrots, 1 cups of frozen garden Peas and 1 cup of frozen green beans. Add 1 tin of chopped tomatoes Leave to simmer for 15 minutes.

Whilst the Bolognese is simmering cook some spaghetti in a separate pan.

Once the vegan Bolognese sauce has been simmering for 15 minutes you will notice that the lentils have absorbed much of the water. At this point add a further 1 cup of water. Then add one third of a cup of vegan gravy granules. The gravy Granules will thicken the sauce up and further add to the sauces already rich flavours.

Top Tip: taste the sauce along the way and add extra salt and pepper if required to suit your pallet.

Once you are satisfied that the lentils are nice and soft and the vegetables are cooked through you are ready to serve.

Dish a generous portion of Bolognese sauce onto a bed of spaghetti and enjoy.
