A delicious vegan creamy avocado pasta sauce using penne pasta and organic mushrooms. This dish is easy and quick to make and is delicious served hot or cold.

- 1 large avocado
- 2 cloves of garlic
- 1 small lemon
- Fresh basil
- 1 tbsp of oil
- 1 tbsp of water
- Salt & pepper
- Mushrooms (any variety)
- Pasta (any vegan variety)
Take a Pasta of your choice and cook enough for 2 servings. Meanwhile using a food Processor Blend 1 large avocado, 2 cloves of garlic, the juice of 1 small lemon and a handful of fresh basil. Add 1 table spoon of oil and 1 table spoon of water to thin out and bind the mixture. Add salt and black pepper to taste. Blend until smooth. now chop up some mushrooms of your choice and fry in a little oil, you can also season the mushrooms whilst frying (optional).
Once the mushrooms and pasta are cooked add them together with the smooth avocado sauce, stir well, serve and enjoy!
